Ingredients to make Sweet and sour Maggi Noodles in pineapple baskets

  • For the maggi noodle -
  • Maggi noodles regular 2 packets
  • water 2 cups
  • Refined sunflower oil or olive oil 1tablespoon
  • sugar -1 tablespoon
  • salt a pinch
  • pineapple juice -1 cup
  • pineapple small pieces - 1/2 cup
  • Amul cheese -2 cubes
  • For the tomato capsicum salsa-
  • oil/butter -1 tablespoon
  • onion chopped -1/2cup
  • capsicum cut into small piece 1/4 cup
  • tomato chopped 1/2 cup
  • tomato puree 1/2 cup
  • salt 1/2 teaspoon or to taste
  • sugar 1 teaspoon
  • Black pepper powder -1/4 teaspoon or as per taste
  • Mixed dried herb -1 teaspoon
  • Cheddar cheese - 1/4cup
  • red chilli powder as per taste
  • red chilli flakes - 1tablespoon
  • For assembling the sweet and sour maggi noodles in pineapple baskets -
  • Big size pineapple - 2numbers
  • Cheddar cheese 1/2cup
  • Amul cheese 2 numbers
  • pineapple cut into small pieces - 1/2 cup
  • pineapple Disc shape thin slices for garnishing - 4 numbers
  • pomegranate seeds for garnishing -4 tablespoon

How to make Sweet and sour Maggi Noodles in pineapple baskets

  1. Take 2 big ripe pineapple cut horizontally width wise we need only lower portion for making 2 baskets.
  2. Pineapple baskets should be of 4 inches in height.
  3. with the help of knife scoop out the flesh of pineapple to get empty pineapple baskets.
  4. For the tomato capsicum salsa-
  5. Take a pan heat butter or oil.
  6. Add in chopped onions and saute for few seconds.
  7. Add in cut pieces of capsicum saute till raw smell disappear from capsicum.
  8. Add some salt, black pepper powder, dried mix herbs or dried basil, chopped tomatoes.
  9. Fry till tomatoes becomes soft.
  10. Add in tomato puree and cook for 2-3 minute.
  11. To this mix grated cheddar cheese and switch off flame.
  12. Keep it aside.
  13. For the maggi noodles- switch on flame take a pan pour 2 cups water and allow to boil.
  14. Add 2 maggi noodles and maggi masala.
  15. Cook for 2 minutes now add pineapple juice and cook maggi noodles for 1 more minutes or till maggi is completely cooked.
  16. add pineapple pieces and cook for a while and switch off flame.
  17. For assembling the maggi noodles in pineapple baskets for baking-
  18. Take one pineapple basket spread tomato capsicum salsa.
  19. Place sweet and sour pineapple maggi noodles down on capsicum salsa layer.
  20. Spread grated cheddar cheese and Amul cheese down on maggi sweet and sour noodles
  21. Add some pineapple small pieces on this cheese layer.
  22. Repeat the same process again spread tomato capsicum salsa layer place noodles on this layer then spread cheddar cheese and Amul cheese layer then again fruits layer.
  23. Cover all these pineapple baskets with aluminium foil
  24. Bake these maggi pineapple baskets at 180 degree centigrade for 10-15 minutes or till the cheese melts completely.
  25. Switch of the oven and take out aluminium foil at the time of serving.
  26. Garnish with pomegranate seeds and pineapple slices.
  27. Now your Indian sweet and sour maggi in pineapple basket is ready to serve.
