Veg manchow soup

Ingredients to make Veg manchow soup

  • Mixed vegetables chopped fine
  • (2 small carrots, small quarter of a cabbage, beans handful, 1/2 capsicum )
  • Onion - 1 chopped
  • Green chillies - 1 or 2
  • Garlic - 1 whole pod (chopped fine)
  • Ginger - 1 inch piece (chopped fine )
  • Cornflour - 2 tbsps heaped
  • Water - 4cups +1/2 cup
  • Sauces:
  • Green Chilli sauce - 2 1/2 tsp
  • Tomatoe ketchup - 2 1/2tsps
  • Soy sauce - 1 tsp
  • Vinegar - 1tsp
  • Salt to taste
  • Coriander
  • Sugar - 1/2 tsp

How to make Veg manchow soup

  1. Add oil to a deep sauce pan
  2. Add the chopped ginger and garlic
  3. Saute for a min and add the green chilli and chopped onion
  4. Saute
  5. Now add the chopped vegetables in order beans, carrot, capsicum, cabbage. Saute in between
  6. Now add the Sauces and vinegar and mix
  7. Add water, around 3 to 4 cups
  8. Add salt and let it boil
  9. Dissolve the cornflour in 1/2 cup of water and add to the boiling soup mixture. Stirring continuously
  10. Now simmer
  11. Add sugar at the end and mix. Garnish with coriander
  12. For the fried noodles:
  13. Boil a block of noodles for 3 to 4 mins and strain
  14. Now deep fry in hot oil and keep aside
  15. Serve the soup garnished with crispy noodles
