Ingredients to make Achari lachha parantha ( crispy achari layered parantha)

  • flour 1 cup
  • Salt 1/2 teaspoon
  • Ghee 1 tablespoon
  • Water for kneading dough
  • Achari masala( leftover pickle masala after finishing pickle) 1/2 cup
  • Refined oil for shallow fry

How to make Achari lachha parantha ( crispy achari layered parantha)

  1. In a bowl add flour, ghee, salt and mix it well.
  2. Now start kneading the flour with the help of water and make a smooth dough as you make for normal Parantha.
  3. Now leave it and cover with lid for 20 minutes rest.
  4. Now preheat tawa and knead one time with the help of oil the whole dough.
  5. Now make a dough ball ( size according to your choice)
  6. And make a thin chapati from this with the help of a roller pin.
  7. Now put 1 tablespoon of achari masala on this chapati and spread it well on all sides.
  8. Now start rolling the chapati in the shape of a fan. And after​ this make a ball from this fan shape.
  9. Now put it into dry flour and make chapati from this with the help of roller pin.
  10. Put it on preheat tawa on medium flame and roast from both sides and apply refined oil.
  11. When it's done remove it from tawa and serve hot with coriander chutney or raita.
My Tip: Make this with leftover mango pickle masala.
