Veggie Maggi Soup

Ingredients to make Veggie Maggi Soup

  • Cabbage 1/4 cup
  • Carrots 1/4 cup
  • French beans 1/4 cup
  • Spring onion whites 1/4 cup
  • Ginger 1 Teaspoon
  • Garlic 1 teaspoon
  • Green chilli 1
  • Vinegar 1/2 teaspoon
  • Soya sauce 2 teaspoon
  • Black pepper powder 1/4 teaspoon
  • Water and veg stock 3 cups
  • Cornflour 4 teaspoon
  • Oil 1 1/2 tablespoon
  • Salt as required
  • Maggi Noodles 1/2 cup

How to make Veggie Maggi Soup

  1. Wash and chop all the vegetables and keep aside.
  2. Heat oil in a pan and add chilli, garlic and ginger.
  3. Saute for a minute then add onion and saute for a minute.
  4. Now add French beans and stir until little soft.
  5. Now add carrot, cabbage, capsicum.
  6. Stir for 3-4 minutes on medium to high flame.
  7. In the meantime, fry the maggi noodles till crispy.
  8. When the veggies are cooked for 3-4 minutes then add soya sauce and black pepper powder and stir.
  9. Now add water and veggie stock.
  10. Add salt and simmer the flame after stirring.
  11. Meanwhile make paste of cornflour with water.
  12. Add the cornflour paste to the soup and stir very well and let it cook until the soup thickens.
  13. Now add vinegar and switch off the flame. Now add the fried noodles and serve.

My Tip:

Adjust the seasonings according to your taste.
