A palatable and healthy recipe which is a combination of vegetables and Black eyed beans. Both gives protein, vitamin and minerals which are very important for kids.

Black - eyed beans salad with homemade dressing

Ingredients to make Black - eyed beans salad with homemade dressing

  • 11/2 cup - blackeyed beans boiled
  • 1 1/2 cup - lettuce chopped
  • 1/4 cup - zucchini finely chopped
  • 1/4 cup - bell pepper finely chopped
  • 1/4 cup - onion finely chopped (optional)
  • 1/4 cup - carrot finely chopped
  • 1/4 cup - tomato finely chopped
  • Dressing: 1/4 cup - cilantro finely chopped
  • 1 1/2 tbsp - yogurt or curd
  • 1 tbsp - lemon juice
  • 1/2 tbsp - honey
  • 1/2 tbsp - cheese
  • 1/2 tbsp - extra virgin olive oil
  • 1 tsp - roasted cumin powder
  • Salt and pepper as per taste

How to make Black - eyed beans salad with homemade dressing

  1. Heat some 1 tbsp oil in a wok, add zucchini, bell pepper, onion and carrot.
  2. Saute for 2-3 mins. Add salt and black pepper powder, mix well.
  3. Add all the dressing ingredients in a bowl and mix well.
  4. Take another bowl, spread lettuce then spread black eyed beans. Add the sauted vegetables, tomato and cilantro, mix well.
  5. Add dressing, toss gently and serve.

My Tip:

You can add more vegetable. Chill in a fridge if you like cold salad.
