Roasted Tomato Soup

Ingredients to make Roasted Tomato Soup

  • 1 pound ripe tomatoes
  • 10-12 Garlic Cloves
  • 2-3 red onions slices
  • 2 spoons pepper
  • Salt to taste
  • 1 bunch freshly chopped basil
  • 2 spoons Italian herb mix
  • 1 cup olive oil
  • I sourdough or hard bread

How to make Roasted Tomato Soup

  1. In a oven safe dish add the tomatoes, onion, garlic add 1 spoon of pepper
  2. Add half of olive oil and bake for 20 minutes
  3. Take from oven and blend well in a mixer
  4. Heat a vessel add oil and when hot sauté onions add the blended mix
  5. Add salt, herbs and chopped basil
  6. To make homemade croutons cut the sourdough bread to fine pieces, sprinkle salt and olive oil and bake in the oven for 3 minutes
  7. Serve hot soup with croutons
