Ingredients Serving: 4

  1. INGREDIENTS FOR JALEBIS 2 cups maida/all purpose flour
  2. 1 cup thick curd
  3. 1 tbsp cornstarch
  4. tsp baking powder
  5. tsp edible orange colour
  6. Water as required
  7. Oil for frying
  8. One squeezy bottle or zip lock bag to make jalebi swirls
  9. INGREDIENTS FOR SUGAR SYRUP 3 cups sugar
  10. 1 cup water
  11. Juice of half a lemon
  12. tsp elaichi/cardamom powder
  13. A few strands of Kesar/ elaichi

Instructions

  1. METHOD FOR SUGAR SYRUP Step 1. Boil sugar and water on a medium flame for 15-20 minutes or till sugar dissolves fully.
  2. Step 2. Lower the flame and let it simmer a little more.
  3. Step 3. Check for one-string consistency. Take a drop of a little cooled of syrup between thumb and index finger. While separating fingers, if one sugar string is formed, remove from flame immediately.
  4. Step 4. Add lemon juice and saffron strands. After 10-12 minutes when the syrup cools down a bit, add elaichi powder, your syrup for jalebis is ready.
  5. METHOD FOR JALEBIS Step 1.In a bowl, mix maida, cornstarch, baking powder, orange colour and curd well to form a lump-free batter. Add a little water to get a thick but pouring consistency. (almost as thick as used for idlis).
  6. Step 2.Pour the prepared batter in the squeezy bottle/zip lock bag. (to use zip lock bag, pour batter into the bag, make a cone similar to henna cones, seal it well from the top and make a very small cut at the pointed end to make jalebis
  7. Step 3. Heat oil on medium flame in a flat bottom vessel… a flat pan will do.
  8. Step 4. Make swirls of jalebi by moving hand in anti-clockwise direction. (clockwise direction will spoil the shape).
  9. Step 5. As they become golden brown and crispy, remove from oil, dip into sugar syrup and transfer immediately on a clean plate/dish. Your crispy instant jalebis are ready!
