No-Machine Marshmallow Ice Cream

Ingredients to make No-Machine Marshmallow Ice Cream

  • 1 cup Whole milk
  • 2 cups marshmallows
  • 2 teaspoons pure vanilla extract
  • 1 cup cold heavy whipping cream

How to make No-Machine Marshmallow Ice Cream

  1. In a heavy bottom pan add milk and marshmallows. Heat over medium flame and stir often to melt marshmallows . You need to lower the flame to medium-low once the mixture starts thickening. Continue until the marshmallows are melted.
  2. Remove the pan from the fire and add the vanilla extract. Allow the mixture to cool down completely.
  3. In a medium glass bowl beat the whipping cream using an electric beater until soft peaks form. When you lift the whisk up the peaks will hold their shape but after few seconds they fall back. This is the perfect consistency.
  4. Fold in half of the whipping cream into the milk marshmallow mixture gently. Now add the remaining cream and fold until well combined.
  5. Transfer to a freezer safe bowl with lid and freeze for 4 hours or until firm. Scoop and serve.

My Tip:

Do not over beat the whipping cream else it will end up in forming butter. Remember to chill the heavy whipping cream, whisk and glass bowl for 10 minutes in freezer before use.
