Maggi delight

Ingredients to make Maggi delight

  • 1 packet Maggi Masala (doubles) or any variety of Maggi you prefer.
  • 1 cup chopped mixed veggies (carrots, green beans)
  • 1 green capsicum cut into roundels
  • 1 large onion cut I to rings (separated)
  • 2 Eggs
  • Salt to taste
  • 1 tablespoon of oil
  • Enough water to cook the maggi

How to make Maggi delight

  1. Cook the maggi as per instructions on the pack. Keep it aside for a few minutes till all the water is absorbed. (for convenience you may add slightly less amount of water)
  2. Heat oil in a wok, add the diced or sliced vegetables. Stir and cook for two minutes.
  3. Mix the cooked maggi and the vegetables.
  4. Heat a tablespoon of oil in a flat fry pan. Place the capsicum rings and onion rings in a layer. Cook for about a minute. Pour the two beaten eggs on the onion and capsicum layer. Cook covered for a minute.
  5. When the egg is nearly done turn the gas to very low flame, put the cooked maggi and vegetable mix on the egg. Cover and cook for a minute till done.
  6. Put a plate on the pan and turn it over on to the plate. Serve hot with tomato chilli sauce.
