Ingredients to make Honey & raisin yoghurt ice cream tart

  • Ice cream :
  • Hung curd - 1 cup
  • Honey - 2/3 rd cup
  • Milk - 1 cup
  • Sugar - 1/4 th cup
  • Kismis - 1/4 th cup
  • Egg yolks - 2
  • Biscuit tarts :
  • Bourbon biscuits - 8
  • Ghee/butter - 1/4 th cup
  • Sugar shards :
  • Sugar - 1/4 th cup
  • Water - 2 tbsp

How to make Honey & raisin yoghurt ice cream tart

  1. Whisk the hung curd and honey together, keep aside.
  2. Now in a pan heat the milk and bring up-to boil.
  3. Add the sugar and boil it dissolves. While this is happening, keep the egg yolks whisked.
  4. Remove the milk mix from the flame and slowly add to the egg yolks while whisking.
  5. Pour the milk egg mix back into the pan and heat low flame and cook till it becomes thick.
  6. Cool this and mix it with the yoghurt mix, add Kismis as well.
  7. Pour it into a box and freeze it for 6-7 hours.
  8. Bash the biscuits to form a coarse powder.
  9. Melt the ghee and add it to the biscuit powder . Spoon them into moulds and tap them. Freeze for 10 minutes.
  10. Heat the sugar and water together without stirring, wait till it changes to light golden color. Remove from heat.
  11. Pour it into a pan lined with aluminium foil.Cool it and break it into pieces.
  12. Assembly : Demould the biscuit tarts, put a dollop of ice-cream and top it with a sugar shard.
