ABOUT Sukhiyan RECIPE

Sukhiyan is a delicious tea time snack extremely popular in Kerala. You may find them in almost all tea shops there. The sweet filling inside the all purpose flour coating is made with green gram, jaggery and coconut.

Ingredients Serving: 4

  1. 1 cup green gram
  2. 1/2 cup grated Coconut
  3. 3/4 cup grated jaggery
  4. 1 teaspoon cardamom powder
  5. 1 cup all purpose flour
  6. 2 tablespoons Rice Flour
  7. 1/4 teaspoon turmeric powder
  8. Salt a pinch
  9. Water as required
  10. Oil for frying

Instructions

  1. Cook green gram adding water until done. Drain the excess water. The green gram should be tender. Do not overcook it till mushy. This is very important for perfect filling.
  2. In a thick bottom pan melt the jaggery with 1/2 cup water. Strain the syrup to remove impurities if any.
  3. Now boil the jaggery syrup, wait for it to thicken. At this stage add grated coconut and cooked green gram. Stir until the mixture is completely dry.
  4. Next add the cardamom powder and mix well. Switch the flame off and allow the mixture to cool.
  5. In a bowl mix together the flours, add turmeric powder and salt. Add water little at a time to make a medium thick lump free batter.
  6. Make lemon sized balls out of the jaggery green gram mixture.
  7. Heat oil in a deep bottom pan. Dip each ball in the batter and coat them well on all sides. Deep fry until golden brown turning sides in between. Drain on paper towels.
  8. Serve warm with a cup of tea.
