Eggless Walnut Chocochip Vanilla Sponge Cake Recipe

Ingredients to make Eggless Walnut Chocochip Vanilla Sponge Cake Recipe

  • 2 cups APF/maida
  • 1 cup fresh cream/malai
  • 1 cup sugar
  • 3 tbsp crushed walnuts
  • 3 tbsp choco-chips droplets
  • 2 tsp baking powder
  • 2 pinches of baking soda
  • A pinch of salt
  • 1.5 cups milk

How to make Eggless Walnut Chocochip Vanilla Sponge Cake Recipe

  1. Mix cream and sugar in mixer jar until satin smooth.
  2. Next add APF/maida, salt, baking soda and powder followed by 1 cup milk. Mix with spatula and grind for few mins.
  3. If needed add more (remaining 0.5 cup) milk and whisk till a smooth batter is formed. It may take few mins.
  4. Throw in walnuts and choco-chips. Save some chips to drop on top.
  5. Grease a baking pan and dust with flour. Pour the batter, pat on the counter top to release any trapped air and drizzle with remaining chips.
  6. Bake at 180 degree Celsius for 40-45 mins until a knife inserted comes clean.
  7. Cool on wire rack, slice with bread knife and enjoy!

My Tip:

Do not add all the milk at one go. Keep adding while checking the consistency and need. Mix it on medium speed for some time to ensure it rises while baking.
