ABOUT Aalan/Pithle RECIPE

Bottle gourd cooked in curd (buttermilk) and gram flour mixture.

Ingredients Serving: 4

  1. Bottle gourd (lauki) peeled and finely chopped - 1/2 medium cup
  2. curd 1 medium cup (200 grams)
  3. water 3 medium cups (300 mililitre)
  4. Garlic 4-5 cloves peeled n diced
  5. Green chillies cut into pieces 2 number or as hot you like
  6. Gram flour (Besan) 4 tablespoon
  7. Turmeric powder 1/2 teaspoon
  8. Red chili powder 1/2 teaspoon
  9. Oil 2 tablespoon For making pithla and 2 teaspoon for tadaka
  10. Cumin seeds 1/2 teaspoon
  11. Mustard seeds 1/2 teaspoon
  12. asafoetida (hing ) a pinch
  13. Salt as per taste.
  14. For Tadka
  15. mustard seeds few
  16. Cumin seeds few
  17. sesame seeds few
  18. garlic 2-3 diced
  19. dry red chili 1-2

Instructions

  1. Take curd in a big bowl add salt, gram flour, turmeric powder, water and whisk/blend it well so that no lumps should be there.
  2. Heat oil in a kadhai, add mustard seeds, cumin seeds, pinch of hing, green chillies and garlic one by one and lastly add chopped lauki (bottle gourd )
  3. Sauté and cover for 2 mins to cook (it does not take much time to cook)
  4. Add mixture of butter milk with constantly stirring. Cook on high heat with occasionally stirring for 2-3 minutes.
  5. It will thicken. Now remove it from heat.
  6. For tadka heat 2 teaspoon oil in a wok
  7. add mustard seeds, cumin seeds, sesame seeds, garlic and red chili.
  8. let it splutter, wait for few seconds and then pour it on prepared pithla.
  9. Garnish with coriander leaves and serve hot with bhakri /chapati/rice.
