Ingredients to make Dahi baingan

  • -Brinjals 4 to 5
  • -one cup curd
  • -2 tbsp besan
  • -2 tsp coriander powder
  • -2tsp red chilli powder
  • -2tsp garam masala powder
  • -1tsp fennel powder
  • -pinch of turmeric
  • -salt for taste
  • -2 to 3 dry red chillies
  • -2tbsp sesame seeds
  • -tsp of cumin and mustard seeds
  • -1/2tsp of split black gram
  • -2 cloves
  • -2 cardamom
  • -bay leaf
  • -cinnamon
  • -Finely sliced onion
  • -one or 2 sliced tomatoes,
  • -curry leaves
  • -ginger garlic paste

How to make Dahi baingan

  1. -Before starting the procedure slice brinjal in to small squares and fry in oil until they turn brown color
  2. -Take a cup of curd and add 2 tbsp besan(chick pea flour) and mix properly so that their are no lumps
  3. -Add spices 2tsp coriander powder,2 tsp red chilli powder,1tsp fennel powder,2 tsp garam masala,pinch of turmeric to curd besan mixture and mix well.
  4. -Take a pan and dry roast 2tbsp sesame seeds and dry red chillies .Blend them in blender to powder
  5. -Now take little oil in vessel and add cumin, split black gram . When color changes add curry leaves,ginger garlic paste and fry for few secs.
  6. -Add finely sliced onions and fry until they change little brown color.
  7. -Add sliced tomatoes and cook until they become mushy
  8. -Now add curd besan spice mixture and mix well.
  9. -Add fryed brinjal pieces and cook for some time with lid closed on low flame.
  10. -Finally add salt and garnish with coriander or some spring onions
  11. -serve hot with roti or phulka.
My Tip: -Add all spices according to spice levels.
