Ingredients to make Rajasthani aakha pyaj

  • 8-10 small sized onions
  • 1 cup curd
  • curry leaves
  • 2 tbsp kasuri methi
  • Pinch of Asafoetida
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp sugar
  • Salt to taste
  • 2 tbsp Oil

How to make Rajasthani aakha pyaj

  1. Peel the onions and cut into slits to form a plus (+)sign, do not cut till end .
  2. Now in a pan heat oil add cumin seeds, curry leaves, asafoetida and turmeric powder
  3. Put onions in it and cook for 2 to 3 minutes with lid on
  4. Now open the lid add other dry ingredients except kasuri methi
  5. Add curd and mix it, and cook for 1 or two minute
  6. Laslty sprinkle kasuri methi, Serve with roti, fulka or naan
  7. Cook for 2 minutes
My Tip: Keep the onions undisturbed, to keep it whole
