Chicken Xacuti

Ingredients to make Chicken Xacuti

  • Chicken 1 kg (8 to 10 pieces)
  • Coconut 2 cups (grated)
  • Onions 2 (sliced)
  • Ginger-Garlic Paste 2 tbsp
  • Whole Red Chillies 10
  • Cumin Seeds 1 tsp
  • Coriander Seeds 2 tbsp
  • Poppy Seeds 2 tsp
  • Black Peppercorns 6
  • Cinnamon 2 sticks
  • Cloves 8
  • Star Anise 1
  • Fennel 1 tbsp
  • Turmeric 12 tsp
  • Salt as per taste
  • Lemon juice 3 tblsp
  • oil as needed

How to make Chicken Xacuti

  1. Grind 1 cup grated coconut with 1/2 cup water and extract 3/4 cup thick coconut milk. Add 1 cup warm water to the leftover coconut again and extract 1 cup thin coconut milk.
  2. Heat a frying pan and dry roast 1 cup coconut till light brown.
  3. In the same pan, add 1 tsp oil and sauté the whole red chillies for a minute and remove. Saute cumin, peppercorns, coriander seeds, cinnamon sticks, poppy seeds, cloves, fennel and star anise.
  4. Take the above roasted spices and add turmeric and water. Grind to make a paste.
  5. Take a large pan, add oil and fry the onions till golden. Add ginger-garlic paste and sauté for a minute.
  6. Add chicken, sauté till brown and then add spice paste and thin coconut milk (1 cup).
  7. Bring to a boil and then lower heat. Partially cover with lid and simmer for 20 minutes till chicken is cooked and keep the gravy thick.
  8. Add thick coconut milk (3/4 cup) and lemon juice. Simmer for a few minutes and serve hot.
