Beetroot Mango Feta Salad

Ingredients to make Beetroot Mango Feta Salad

  • 1 cup peeled, cooked and diced beetroot
  • 1 cup peeled and diced mango
  • ½ cup crumbled or cubed feta cheese
  • 2 cups of mixed green salad leaves or lettuce
  • 10 to 12 mint leaves, chopped
  • Dressing :
  • 1 tsp Lemon juice
  • 2 tbsp fresh orange juice
  • 2 tbsp Extra virgin olive oil
  • 1 tsp honey (optional)
  • ½ tsp salt
  • 1 tsp coarse pepper powder
  • ¼ tsp grated fresh ginger
  • ½ tsp orange zest (grated orange rind)

How to make Beetroot Mango Feta Salad

  1. Layer the green leaves all over the serving bowl.
  2. Add mango, beetroot and feta.
  3. Top it with mint leaves.
  4. Whisk all the ingredients of the dressing together.
  5. Pour over the salad just before serving.
My Tip: Use paneer instead of feta cheese. I use a small jar with a tight lid to shake the dressing.
