Ingredients to make Ratatouille

  • 1tblsp tomato paste
  • 3 tablespoons olive oil
  • 2 onions chopped
  • 2 eggplant cut into cubes
  • 1 small bay leaf
  • 4 garlic clovesn peeled and sliced
  • 2 zucchini halved lenght wise and cut into cubes
  • 1 Each redyellow green bell peppers
  • plum tomatoes coarsely chopped (about 1 1/4 cups)
  • 1/2 cup shredded fresh basil leaves
  • salt to taste
  • pepper to taste
  • Chilli flakes 1/2 tsp
  • Dried oregan 1/2 tsp

How to make Ratatouille

  1. Over medium-low heat, add the oil to a large skillet with the onion,, stirring occasionally, until the onion has softened. Add the three bell peppers and cook for few minutes.
  2. Add the eggplant and zucchini cook, stirring occasionally, for 8 minutes or until the veges has softened. Stir in the tomatoes and add garlic basil leaves and all the seasoning.
  3. In the end put the tomato paste and one glass of water. Cover and cook for 15 minutes on slow flame Don't over cook
