Ingredients Serving: 4

  1. Pumpkin, peeled and cubed 2 cups
  2. Yoghurt/ curd 1/2 cup
  3. Coarsely ground roasted groundnuts 3 tsp
  4. Ghee/ oil for cooking
  5. Jaggery 1 tsp (as per taste)
  6. Cumin seeds 1 tsp
  7. Mustard seeds 1 tsp
  8. Curry leaves few
  9. Red chillies 2
  10. Green chillies 2
  11. Asafoetida/ hing 1/2 tsp
  12. Turmeric powder 1/2 tsp
  13. Coriander powder 1 tsp
  14. Red chilli powder as per taste
  15. Salt as per taste
  16. Coriander leaves for garnishing

Instructions

  1. Take the peeled pumpkin, pressure cook it for 2 whistles on medium flame.
  2. When the air escapes on its own, remove and strain the excess water from the pumpkin and let it cool for some time.
  3. When pumpkin cools, smash it roughly, add yogurt, peanut powder and salt, mix properly.
  4. In a small pan add some ghee/ oil for tadka, add in it mustard seeds, cumin seeds, curry leaves, green chillies, red chillies, asafoetida and turmeric powder.
  5. Now switch off the flame and add some coriander powder and chilli powder.
  6. Add this tadka to the pumpkin mixture, now add jaggery as per taste and mix it properly.
  7. Serve it garnished with fresh coriander leaves.
