Ingredients to make Salad Nicoise

  • For the French vinaigrette:
  • 1 cup olive oil
  • 1/4 cup white vinegar
  • 2 teaspoons Dijon mustard
  • 1 large garlic clove smashed
  • 1/4 teaspoon lemon juice
  • salt and freshly ground black pepper
  • For the salad
  • 250 green beans
  • 4 large hard-boiled eggs sliced optional
  • 2 ripe tomatoes quartered
  • 4 or 5 olives
  • 100 gms american corn
  • Mix green salad leaves of your choice
  • 1 Cucumber chopped
  • 1 onion peel and make rings

How to make Salad Nicoise

  1. For the dressing, combine the oil, vinegars, Dijon, garlic lemon juice salt and pepper and whisk until the dressing is thick and creamy (emulsified).
  2. For the salad: Blanch the green beans.
