ABOUT Kohlapuri Sukha Chicken RECIPE

A spicy, dry gravy chicken dish, which is one of the most popular dishes from Maharasthra

Ingredients Serving: 4

  1. Chicken 800gms
  2. Ginger Garlic Paste 2 tbsp
  3. Lemon Juice 1 tbsp
  4. Oil 4 tbsp
  5. Fresh Coriander leaves 2 tsp (Finely Chopped)
  6. For Masala:
  7. Dry Red Chillies Whole 5 to 6
  8. Green Chillies 2
  9. Cumin Seeds (Jeera) 1 tsp
  10. Peppercorns (Kali Mirch) 6
  11. Cloves (Laung) 3
  12. Cinnamon (Dalchini) 2 sticks
  13. Sesame Seeds (Til) 3 tsp
  14. Green Cardamom (Choti Elaichi) 3
  15. Coriander Seeds (Dhania Seeds) 2 tsp
  16. Dry Coconut 1 cup grated
  17. Garlic 8 cloves
  18. Ginger 12 inch
  19. Onions 2 medium (Finely Chopped)
  20. Mustard Seeds 2 tsp
  21. Turmeric powder 1 tsp

Instructions

  1. Roast all the spices one by one. Roast the coconut till golden brown. Grind all of above spices and coconut into a paste along with the ginger and garlic.
  2. Clean the chicken and marinate with ginger- garlic paste, lemon juice, salt and half of the ground masala for upto 2 hours. Pressure cook the chicken with 3 cups of water for about 8-10 minutes
  3. Once the pressure is released, leave to cook open till remaining moisture dries up completely.
  4. Heat oil in a pan and sauté onions till golden brown. Add the masala paste and cook till oil separates. Add Chicken and sauté till the spices mix well together.
  5. Check seasoning and serve hot garnished with chopped coriander leaves. Can be eaten with steamed rice or Jowar(Millet) Rotis or Maharashtrian Puris called Vade.
