Quinoa salad

Ingredients to make Quinoa salad

  • 1 cup quinoa
  • 1 cucumber chopped
  • 1/2 red onion chopped
  • 1/2 red bell pepper cooked
  • 1/4 cup low fat feta cheese
  • 1/8 cup olive oil
  • Salt and Pepper as per taste
  • 2 tbsp balsamic vinegar
  • 2 tbsp lemon juice
  • Chopped coriander for garnish

How to make Quinoa salad

  1. Cook 1 cup quinoa in about 2 cups of water till it's completely cooked. set it aside
  2. Add all chopped vegetables in a bowl and add cooked quinoa
  3. make dressing by adding olive oil , lemon juice, balsamic vinegar , salt and pepper . Mix it well in a separate bowl.
  4. Add dressing to quinoa and vegetable mixture. Add coriander and mix well. let it sit for 10-15 minutes to get all flavors
