Ingredients to make Dum Aloo in my style

  • Par boiled aloo 15-20
  • Roughly chopped onions 3-4
  • Roughly chopped tomatoes 2
  • hari mirch 2
  • ginger small piece
  • Thick curd 1 cup
  • salt to taste
  • haldi pinch off
  • Kashmiri red chilly powder 1 tsp
  • Dhaniya powder 1 tsp
  • jeera 1/4 tsp
  • Hari ilaychi 2
  • Laung 2-3
  • hing pinch off
  • Kasuri methi 1 tsp
  • sugar 1 tsp
  • oil for frying + 2 tblspn
  • kaju paste 1 tblspn (optional)

How to make Dum Aloo in my style

  1. Peel boiled potatoes and make holes in aloo using fork.
  2. Fry in the hot oil till golden brown. Keep aside.
  3. In a kadai heat 1 tblspn oil . Add jeera, ilaychi, laung and hing.
  4. Add chopped onions and adrak. Saute till golden brown.
  5. Add chopped tomatoes and green chilly. Add all dry spices. Cook till oil separates.
  6. Switch off the flame and let it cool.
  7. Grind the ready mixture in smooth paste.
  8. In the same kadai heat 1 tblspn oil . Add grind onion paste. Add salt and saute till mixture start leaving kadai. Add beaten curd, mix well.
  9. Add fried potatoes, mix well. Add 1 cup water and let it boil.
  10. Add kasuri methi. Cover the kadhai and cook on low flame for 5 mins.
  11. Garnish with hara dhaniya, serve hot with roti or rice.

My Tip:

You can add kaju paste for more richness.
