Ingredients to make Sauteed Eggplant With Yogurt or Dahi Baigan

  • 3 Small Size Brinjal / Eggplant
  • 1 Cup yogurt/Curd
  • 1/4 tsp Panchphoran (Blend of five spices fenugreek seeds, Nigella seeds(kalonji), Fennel Seeds, Cumin Seeds and Mustard Seeds)
  • 1/4 tsp turmeric Powder
  • 1/4 tsp red chilli Powder
  • 7-8 curry leaves
  • 1/2 tsp coriander Leaves
  • 4-5 garlic Cloves minced
  • 2 green chillies
  • 2 red chillies
  • salt to taste
  • oil for frying

How to make Sauteed Eggplant With Yogurt or Dahi Baigan

  1. Wash the brinjal and cut it from the centre until other ends. Do not cut completely
  2. In a bowl, add turmeric powder, red chilli powder, salt and marinate the brinjal.
  3. Heat oil in a frying pan and fry the brinjal pieces till it turns golden brown. Keep this aside.
  4. Pour yoghurt into a bowl add little water and salt, mix it well.
  5. Heat 1tsp oil in a tempering pan add panchporan to it, once the panchporan is tempered add garlic, red chillies, green chillies, roast it nicely. Now add the curry leaves then turn off the flame.
  6. Once the tempered mixture slightly cools down, pour it into the yoghurt, add the fried brinjal, coriander leaves and salt, mix it well. Enjoy with Steam Rice or Roti.

My Tip:

Don't over roast the garlic. as nicely saute the garlic gives a very nice flavour to the dish.
