Ingredients to make Anda Ghotala

  • 8 eggs
  • 6 Chopped onions
  • 3 Chopped tomatoes
  • 2tbsp coriander
  • 5tbsp oil
  • 1/2tsp ginger and Garlic paste
  • 1/2tsp Red Chili Powder
  • 1/2tsp turmeric Powder 1/2tsp
  • 1/2tsp cumin Powder
  • 1/2tsp Garam masala
  • salt to taste

How to make Anda Ghotala

  1. Boil 4 eggs. And then remove its shell & cut each in 2 pieces.
  2. Heat oil in a pan. Once hot, add mustard seeds. Let them pop. Then add ginger, garlic, green chilies, and onions. Saute onions till oil leaves the sides.
  3. Add tomatoes to this. Lightly saute and then add cumin powder, chili powder, salt, garam masala, and turmeric. Once tomatoes soften break 2 eggs and scramble in this onion tomato masala.
  4. Now add chopped boiled eggs to this scrambled mixture. Top with coriander and toss.
  5. In a non-stick fry pan make 4 sunny side up eggs. Divide the egg tomato onion mix into four plates and top each one with a sunny side up. Garnish it with coriander leaves and serve this Anda Ghotala with butter pav on the side.

My Tip:

Do not stir it after adding last two unboiled eggs.
