Dahi Bhindi

Ingredients to make Dahi Bhindi

  • bhindi - 250 grams
  • water 1 1/2 to 2 cups
  • yogurt - 1/2 cup
  • tomato - 2
  • onion - 1
  • almonds - 10
  • Fresh cream - 2 tbsp (optional)
  • besan - 1 1/2 tbsp
  • coriander powder - 1/2 tsp
  • ginger garlic paste - 1/4 tsp
  • cumin seeds - 1/4 tsp
  • chilly powder - 1/4 tsp
  • turmeric Powder - 1/4 Tsp
  • Garam masala - 1 to 2 pinches
  • Kasuri methi - a little
  • salt to taste.

How to make Dahi Bhindi

  1. Soak almonds for few minutes in hot water, discard the water and add tomato and grind to fine paste.
  2. Wash bhindi thoroughly and cut the ends of bhindi and chop them to bite size pieces. Set aside.
  3. Add some oil in a non stick vessel. Fry the bhindi on medium flame till they are almost done. Remove and set aside.
  4. In the same vessel add some more oil, add cumin seeds, once they crackle add finely chopped onion cubes. Fry till light golden brown. Add ginger garlic paste and sauté for few seconds. To this add almond and tomato paste.
  5. Add salt, chilly powder, turmeric powder, kasuri methi and coriander powder. Fry well till the tomato paste comes together as thick paste. add besan and fry till raw smell is gone over low flame.
  6. Whisk yogurt and water well. Add this to the besan tomato mixture. Cook over low to medium flame stirring. Add garam masala in the end.
  7. Add fried bhindi pieces and cook for few minutes. Garnish with fresh cream and cook for few seconds. Serve hot with roti, Phulkas.

My Tip:

Cashew nuts can be replaced instead of almonds. Spices can vary according to one's preference.
