Stuffed cucumber salad

Ingredients to make Stuffed cucumber salad

  • Finely chopped cucumber 200 gms
  • pomegranate seeds 1/4 cup
  • Green grapes 8-10
  • Roasted peanut powder 1/2 cup
  • salt to taste
  • sugar 1 tsp
  • Black pepper powder 1 tsp
  • lemon juice of 1 lemon
  • Chopped green chillies 1-2
  • cabbage leaves 12-15 or as required

How to make Stuffed cucumber salad

  1. Chop cucumber very finely and mix 1 tsp salt
  2. Rest for 10-15 min
  3. Squeeze it and remove water from it
  4. Add salt, sugar, black pepper powder, lemon juice, green chillies and roasted peanut powder
  5. Add pomegranate seeds and green grapes (cut into half)
  6. Mix well
  7. Boil water and blanch cabbage leaves for 1/2 to 1 min
  8. Take blanched cabbage leaf, put above cucumber mixture over it and fold the leaf
  9. Apply tooth pick over it and enjoy
