My favorite dish as a kid was Bajji, both my mother and grandma would always make this for me

Ingredients Serving: 4

  1. 3-4 potatoes cut into thin slices
  2. 100 grams Panner cut into large cubes
  3. 3-4 Onions cut into rings
  4. 2 eggplants cut into slices
  5. 2 large green chillies
  6. 1 cup chopped coriander
  7. 2-3 spoon salt
  8. Pinch of chat masala
  9. Green chutney to serve
  10. Red chutney to serve
  11. Ketchup to serve
  12. 2 cups besan or chickpea flour
  13. 1 cup maida or pancake flour
  14. Pinch Of Baking Soda
  15. 3 cups oil

Instructions

  1. Grind the chillies with coriander in a blender with water
  2. Take a pan add besan and pancake flour. If you don't have pancake flour, you can add baking soda to maida and make your pancake flour
  3. Add the chillies, coriander water and whisk with flour
  4. The bajji batter should not be too thin or too thick it should flow well and add salt, mix well
  5. Drop the chopped veggies in batter
  6. Heat oil and dip one by one
  7. Turn until golden and serve with chutneys and chat masala in top
