Ingredients to make Mango Cheese Cake

  • 1 packet Marie biscuit/multigrain
  • 250 gms Mango puree
  • 2 cups hung Yogurt
  • 2 tbsp Gelatin
  • 1/4 cup Water
  • 3/4 cup powdered Sugar
  • 50 gms Butter
  • Garnishing: thin mango slices
  • 1 cup Mango puree
  • 1 tsp. Gelatine dissolved and kept aside

How to make Mango Cheese Cake

  1. Add butter to the crushed biscuits and rub with your fingers until they attain crumb like consistency. Leave this in the microwave for ½ minute. Gently spread on a base of a flat dish. Leave this in a fridge to set for ½ hour.
  2. Soak gelatine in water and set aside. Take yogurt at room temperature and add in sugar to it. Whisk until light and fluffy.
  3. To this add mango puree and gelatine, which is melted over a pan of hot water.
  4. Stir and strain onto the prepared biscuit-butter base. Leave this in fridge to set. Add in remaining gelatine to mango puree and strain over cheesecake when set.
  5. Allow this to set and garnish with mango pieces.
My Tip: The cheese cake sets well over night and morning the top layer of a cup of mango purée could be poured.
