Eggless Blueberry Lemon Muffins

Ingredients to make Eggless Blueberry Lemon Muffins

  • Maida 1-1/2 cup
  • Powder sugar 1 cup full
  • Yogurt 1 cup full
  • Fresh cream/ malai 3 tbs
  • Lemon juice 1 tbs
  • Lemon zest 1 lemon
  • Baking Powder 1 tsp
  • Baking soda 1/2 tsp
  • Dried blueberries 3 to 4 tbs
  • Mix fruit extract some drops
  • For Garnish :
  • Melted dark chocolate in cone
  • Sugar for sprinkle

How to make Eggless Blueberry Lemon Muffins

  1. Take a bowl, add one cup full yogurt.
  2. Add sugar and fresh cream and mix well.
  3. Add baking soda, baking powder and mix fruit extract and again mix.
  4. Now your batter start to rise.
  5. Now add lemon juice and zest in it.
  6. Mix well and now time to adding flour into it.
  7. Add half flour and mix well.
  8. Again add half flour and again mix it with by cut and fold method.
  9. Now add dried blueberries and again mix .
  10. Now line up the try with paper cups and pour the mixture up to 3/4. sprinkle some berries on the top.
  11. Now bake this Muffins in preheated oven to 180℃ for 20 minute.
  12. After baking let it cool on wire rack for 10 minutes.
  13. Now garnish your muffins with dark chocolate and sprinkle some sugar on it.
My Tip: In basic recipe mix fruit extract is not added, but I love that flavor so I added that.
