Ingredients to make Raj Kachori (Crispy Kachori stuffed with chaat)

  • For Kachori Dough:
  • 1 1/2 cup - sooji
  • salt water & oil as required
  • For the Stuffing:
  • 1/4 cup - rajma
  • 1/4 cup - matra (white peas)
  • 1/4 cup - lobia (black eyed beans)
  • 1 - potato boiled
  • 1 tbsp - lemon juice
  • 1 tsp - roasted jeera powder
  • coriander chutney & sweet chutney
  • curd (Yogurt) as desired
  • For Garnishing:
  • chat masala
  • namkeen (any)

How to make Raj Kachori (Crispy Kachori stuffed with chaat)

  1. Soak rajma, matar and lobia overnight. Boil all in a pressure cooker. Keep aside to cool.
  2. Add all the boiled beans, potato, salt, cumin powder and lemon juice in a bowl, mix well. Keep it aside.
  3. Mix sooji, salt, oil and water, knead the dough. Cover with a wet cloth, keep aside for 10 mins.
  4. Divide the dough into equal small parts and roll it like a puri. Repeat. Deep fry till it turns brown in colour and becomes crispy.
  5. Break the kachori in the middle. Add the boiled potato, masala, curd, green chutney and sweet chutney.
  6. Sprinkle some Chaat Masala and Namkeen.
  7. Raj kachoris are ready. Enjoy!

My Tip:

Use any thing for stuffing. For best results : Roll them thin and fry on a low flame for crispy kachoris.
