ABOUT Raj Kachori (Crispy Kachori stuffed with chaat) RECIPE

Raj Kachori is filled with various flavours of sweet, spicy, crunchy etc. It is crispy from outside and soft from inside. Here is an original and a healthy recipe.

Ingredients Serving: 4

  1. For Kachori Dough:
  2. 1 1/2 cup - sooji
  3. salt water & oil as required
  4. For the Stuffing:
  5. 1/4 cup - rajma
  6. 1/4 cup - matra (white peas)
  7. 1/4 cup - lobia (black eyed beans)
  8. 1 - potato boiled
  9. 1 tbsp - lemon juice
  10. 1 tsp - roasted jeera powder
  11. coriander chutney & sweet chutney
  12. curd (Yogurt) as desired
  13. For Garnishing:
  14. chat masala
  15. namkeen (any)

Instructions

  1. Soak rajma, matar and lobia overnight. Boil all in a pressure cooker. Keep aside to cool.
  2. Add all the boiled beans, potato, salt, cumin powder and lemon juice in a bowl, mix well. Keep it aside.
  3. Mix sooji, salt, oil and water, knead the dough. Cover with a wet cloth, keep aside for 10 mins.
  4. Divide the dough into equal small parts and roll it like a puri. Repeat. Deep fry till it turns brown in colour and becomes crispy.
  5. Break the kachori in the middle. Add the boiled potato, masala, curd, green chutney and sweet chutney.
  6. Sprinkle some Chaat Masala and Namkeen.
  7. Raj kachoris are ready. Enjoy!
