Ingredients Serving: 3

  1. 750 gms mutton, washed and drained
  2. 1 tbsp oil
  3. 1/2 cup shallots, chopped
  4. 1 large onion, sliced
  5. 2 medium onions, chopped
  6. For Garnish:
  7. Curry, Coriander and Mint leaves
  8. For paste:
  9. 4 tbsp yogurt
  10. 1/2 bunch coriander leaves
  11. 1/3 bunch mint leaves
  12. 1 heaped tbsp coriander powder
  13. 1/2 tsp turmeric powder
  14. 1/2 tsp red chilli powder
  15. 3 green chillies
  16. 1 inch pc ginger
  17. 6 cloves garlic
  18. 3 cardamom pods
  19. 4 cloves
  20. 1 piece cinnamon
  21. 1 tsp cumin seeds
  22. 1/2 tsp fennel seeds
  23. 1 tbsp black pepper powder
  24. Salt to taste

Instructions

  1. Combine all ingredients “for paste” in a blender and blend into a smooth paste.
  2. Add it to the mutton and marinate it for at least 1/2 an hour. The more it is left to marinate, the better.
  3. Heat your pressure cooker. Add the oil to heat. Saute shallots and onions till soft.
  4. Add the tomatoes and saute till mashed. Now add the mutton along with all the marinade. Check the salt.
  5. Close and cook till the mutton gets done, 3 whistles on a high flame and 15 minutes on simmer. Allow the pressure to release by itself.
  6. Add the curry leaves, coriander and mint leaves. Adjust salt and pepper to taste. Serve warm with parathas or rice.
