Quinoa cooked to a crispy texture with vegetable and flavoring of choice

Ingredients Serving: 2

  1. Quinoa. 1cup
  2. Vegetable stock. 1 cup
  3. Water. 1 cup
  4. Salt, pepper to taste.
  5. Dried Italian herbs. 1 tablespoon
  6. Chilli flakes. 1 teaspoon
  7. Basil leaves. roughly shredded, to taste
  8. Bell pepper cubed. 1/2 cup
  9. Red onions. 1 medium
  10. Cherry tomatoes ( halved). 5-6
  11. Any greens (if desired). few leaves
  12. Olive oil
  13. FOR THE DRESSING :-
  14. Cucumber roughly chopped. 1 cup
  15. Thick yogurt. 1cup
  16. Lemon juice. 1 tablespoon
  17. Salt, pepper to taste.
  18. Olive oil

Instructions

  1. Blend ingredients for yogurt sauce in a blender. Keep aside.
  2. Heat pan, add water and stock
  3. Bring to a boil, add rinsed quinoa.
  4. Adjust the liquid proportion according to packet instructions.
  5. Fluff it a bit, add salt and pepper
  6. Add dried Italian herbs.
  7. Spread across the pan and allow to become crispy
  8. Do not allow to stick to the bottom
  9. Meanwhile, heat another pan and sauté the chopped vegetables
  10. Add salt and season with pepper.
  11. Take a broad salad bowl, spread the quinoa. Add the vegetables on top.
  12. Garnish with shredded basil leaves
  13. Swirl the yogurt dressing on top
  14. Serve cold.
