Spinach Rice

Ingredients to make Spinach Rice

  • 1 bowl of cooked rice
  • 1 cup of spinach leaves
  • 2 dry red chillies
  • 1 tbsp oil
  • 1-2 cloves of garlic, mashed
  • 1 tsp cumin/ jeera seeds
  • 1 tsp mustard seeds
  • sugar as per taste (this is optional)
  • 1/2 tbsp butter
  • salt as per taste

How to make Spinach Rice

  1. Cook the rice and let it cool. (Leftover rice also can be used).
  2. Heat 1 tbsp oil and 1/2 tbsp butter in a pan, add the mustard and jeera seeds, let it crackle, add in the crushed garlic and saute for 1 minute.
  3. Add the dry chillies, then add the chopped spinach leaves, Mix well, add salt as per taste and cook for 3-4 minutes.
  4. Finally, add in the cooked rice, mix well and stir-fry for 3-4 minutes.
  5. Serve hot with curd or chutney.
