Veggie Bajji

Ingredients to make Veggie Bajji

  • 2-3 potatoes
  • 2-3 brinjals
  • 1 large plantain
  • 2-3 onions
  • 100 grams paneer
  • 3 cups besan
  • 2-3 green chillies
  • 2-3 cloves garlic
  • 1 cup chopped coriander
  • Pinch of turmeric
  • Salt to taste
  • Red, green chutney to serve
  • Tomato ketchup to serve
  • Chat masala to serve
  • 1 cup pancake flour or maida with pinch of baking soda
  • 3 cups oil

How to make Veggie Bajji

  1. Chop the potatoes and onions to thin slices
  2. Make cubes of paneer and plantain
  3. Make thin slices of brinjal
  4. Grind chillies, coriander and garlic and add one cup water to this
  5. Make a batter with besan, pancake flour and ground chilli water
  6. The batter should not be too thin
  7. Add the salt to taste and turmeric at this stage mix well
  8. Drop the veggies in batter for 5 minutes
  9. Heat the oil in pan and deep fry veggies
  10. Serve with sauces
My Tip: The sprinkle of chat masala on top makes this dish extra special.. you just can't stop eating
