Ingredients to make Cool egg salad

  • Hard boiled eggs - 2 no.
  • Boiled potato - 1 small
  • Boiled peas - 1 tbsp
  • Roasted peanuts - 1 tbsp
  • Onions chopped - 1 tbsp
  • Salt- to taste
  • Black pepper- to taste
  • Sugar(optional) - as per your preference
  • Thick curd 1 tsp

How to make Cool egg salad

  1. If the ingredients are pre-boiled it will hardly take 15 minutes to assemble.
  2. Cut the boiled eggs into lengthwise and remove its yolk.
  3. Now in a mixture grinder add egg yolks, dahi, 1/4 boiled potatoes and grind to a fine paste.
  4. Add salt, black pepper, salt, sugar, coarsely mashed green peas, crushed chopped peanuts, finely chopped onions and mix it well.
  5. Set the egg whites on a plate. Now take 1/2 tspn of above mixture and fill each egg whites.
  6. Decorate with remaining peas, peanuts and remaining potato slices and enjoy.
My Tip: You can enjoy this salad with french fries also. Here I have used slightly roasted peanuts as I like its taste very much
