ABOUT Freshie Salad RECIPE

This healthy colorful, nutrient packed salad can be made in very less time and eaten in even lesser time.

Ingredients Serving: 4

  1. One big onion
  2. Two big red tomatoes
  3. Two cucumbers
  4. One medium beetroot
  5. One medium orange or red carrot as available
  6. Salt to taste or 1/2 tsp
  7. Red chilli powder - 1/2 tsp
  8. One lemon
  9. 1 tbsp coriander leaves

Instructions

  1. Soak the onion, tomatoes, cucumbers, beet, carrot in a big bowl of water for 10 minutes to remove impurities.
  2. Then wash and drain well all these vegetables.
  3. Peel the onion, slice it and add it to a big dry bowl.
  4. Next cut the tomatoes into julienne (thin slices) , discard the seeds and add tomato julienne to the bowl.
  5. Peel the cucumbers, rub their sliced ends from both the sides to remove their bitterness.
  6. Cut the cucumbers into thin roundels, add to the bowl
  7. Peel the beet, remove it's root and the long tip.
  8. Cut the beet into thin roundels, then again cut it into half, add to bowl.
  9. Peel the carrot, remove the end parts on both sides.
  10. Cut the carrot into thin roundels, cut again into half and add to bowl.
  11. Add salt and red chilli powder to the bowl.
  12. Wash the lemon, cut, remove its seeds.
  13. Squeeze the lemon's juice into the bowl.
  14. Wash and drain the coriander leaves.
  15. Chop the coriander leaves finely and add to the bowl.
  16. Mix all these ingredients in the bowl with a spoon.
  17. Transfer this freshie salad into a closed container and keep it in the refrigerator for cooling.
  18. This yummy bite freshie salad makes any dish more palatable! Enjoy!
