ABOUT Mustard chicken and Baby corn salad RECIPE

The touch of mustard chicken combined with vegetables gives it a perfect blend, mouth watering salad

Ingredients Serving: 5

  1. For chicken:
  2. 2 chicken breasts
  3. 1 tbsp mustard powder or mustard paste
  4. 2 tbsp olive oil
  5. 1 tbsp fresh garlic paste
  6. Parsley dry 1 tsp
  7. Salt 1/2 tsp
  8. Black pepper powder 1/2 tsp
  9. For salad:
  10. Lettuce salad leaves as required
  11. 1/2 cup white kidney beans
  12. 1 carrot finely chopped
  13. 1/4 cup boiled green peas
  14. 1 onion finely chopped
  15. 1 can whole baby corn (cut diagonally in slices) (storing some slices for garnishing)
  16. FOR FRENCH DRESSING:
  17. Oil 1/2 cup
  18. Vinegar 1/4 cup
  19. Salt 1/2 tsp
  20. Black pepper 1/2 tsp
  21. Mustard paste 1/2 tsp
  22. Garlic paste 1/2 tsp

Instructions

  1. METHOD FOR CHICKEN:
  2. In a bowl marinate the chicken breasts with all the above ingredients (of chicken) for about 30 mins. After which in a griller pan, grill your chicken with 2 tbsp olive oil for about 7-8 mins, be careful not to over grill the chicken.
  3. Cut your grilled chicken in small chunks
  4. In another bowl mix all the salad ingredients (and add in some grilled chicken chunks)
  5. Drizzle in the French dressing, with a the help of wooden spoon toss the salad nicely.
  6. Next lay the lettuce leaves on a platter, pour in the salad
  7. Garnish your salad with the remaining pieces of baby corn and chicken chunks.
