Amarkhand or Mango Shrikhand

Ingredients to make Amarkhand or Mango Shrikhand

  • 3 cups curd fresh
  • 2 mangoes peeled and chopped
  • 4 cardamom (elaichi) crushed
  • 1/4 tsp of saffron strands/ kesar
  • 1 cup powdered sugar or as required.
  • FOR GARNISH :
  • Some dry fruits like cashews, pistachios, almonds blanched and chopped
  • 1 tbsp mango chunks

How to make Amarkhand or Mango Shrikhand

  1. Hang the curd in a muslin, cheese cloth for 3-4 hours.
  2. Puree the mangoes in a blender until smooth.
  3. Add the thick hung curd to the blender along with crushed cardamom, saffron and sugar.
  4. Blend until mixture is smooth and lump free.
  5. Pour shrikhand in individual serving bowls.
  6. Chill and serve the amarkhand after garnishing with dry fruits and saffron.
  7. Goes well with pooris, parathas or you can have just like that.
My Tip: The curd and mango puree should be fresh and cold while preparing the amarkhand.
