Authentic Gujarati dish made with gram flour and curd mixture

Ingredients Serving: 6

  1. Gram flour / besan 1 cup
  2. Curd 1 1/2 cup
  3. Water 2 cups
  4. Ginger paste 1/4 tsp
  5. Green chilli paste 1/4 tsp
  6. Salt to taste
  7. Turmeric powder 1/4 tsp
  8. Oil for tempering 1 tsp
  9. Mustard seeds 1 tsp
  10. Curry leaves 7-8
  11. Green chilli 1
  12. Grated fresh coconut 2 tbsp
  13. Chopped coriander leaves 2 tbsp

Instructions

  1. Beat curd, add water in it
  2. Add gram flour in curd and water mixture and make a smooth batter without lumps
  3. Add ginger paste, salt, green chilli paste in batter mix well
  4. Heat a deep pan and add this batter to it and cook
  5. You have to move batter continuously with spoon
  6. When batter become thick enough and also start leaving the pan turn off the gas
  7. Spread this batter on a greased plat form like a thin sheet
  8. Let it cool down little then cut it in strips
  9. Sprinkle some grated fresh coconut and coriander leaves on it and fold this strips
  10. Now heat oil in a tadka pan add mustard seeds, green chilli, curry leaves and spread this tadka over khadvi
  11. Ready to serve
