Creamy Mango Ice-cream

Ingredients to make Creamy Mango Ice-cream

  • 2 big size ripe mangoes or 2 cups mango puree
  • 1 1/2 cups fresh hung curd
  • 200 gm milkmaid
  • Half cup fine powdered sugar
  • 5 drops vanilla essence
  • 2 tbsp mango chunks
  • FOR GARNISH:
  • 2 tsp pistachios blanched and chopped
  • 1/5 tsp saffron strands

How to make Creamy Mango Ice-cream

  1. Wash and peel the mangoes
  2. Puree the mangoes and keep aside.
  3. Beat the curd in a bowl until it becomes fluffy.
  4. Add milkmaid, mango puree and vanilla essence. Then mix well with blender.
  5. Add more milkmaid beat well.
  6. Add fine sugar if required, as it all depends on the sweetness of the mangoes.
  7. Add mango chunks and just fold in.
  8. Pour the mixture into a container or a freezing tray and set in the freezer covered for at least 6-7 hours.
  9. In between, after 2 hours take out the ice-cream and just fluff up and mix with the help of a fork, and set it again in freezer.
  10. When set, serve the delicious creamy mango ice cream with garnished with chopped pistachios and saffron.
  11. Enjoy endlessly..

My Tip:

The fluffing up of ice-cream in between is a must to avoid ice crystals and to ensure its creamy texture.
