Pumpkin in curd gravy

Ingredients to make Pumpkin in curd gravy

  • pumpkin peeled 500 gms
  • curd fresh 1 cup
  • onion grated 1 cup
  • ginger garlic paste 1/4 cup
  • salt to taste
  • water as required
  • red chilli powder 1/2 tsp
  • coriander powder 1 tsp
  • turmeric powder 1/2 tsp
  • Garam masala powder 1/2 tsp
  • Yellow mustard seed paste 1 tsp
  • mustard oil 2 tbsp
  • methi seeds 1/4 tsp

How to make Pumpkin in curd gravy

  1. Cut the pieces of pumpkin
  2. Heat oil in a cooker or deep pan
  3. Add methi seeds and fry till pink
  4. It will take few seconds
  5. Don't overfry .
  6. Fry onion till light golden
  7. Add ginger garlic paste and salt .
  8. Fry for 5 mnts on high heat .
  9. Add all powdered spices and mustard seed paste.
  10. If needed then add small qty of water.
  11. Cook on low heat till leaves oil .
  12. Blend the curd and add in cooker .
  13. Cook the masala for 5 mnts on high heat.
  14. Add pumpkin pieces and fry in the masala .
  15. Till it will absorb all moisture without lid.
  16. Add water for gravy as you like .
  17. Can make thick or thin gravy.
  18. Garnish with coriander leaves.
  19. Serve with rice or chapati .
