Ingredients to make Dahi Baigana (Brinjals in a yogurt gravy)

  • 4 small size brinjals.
  • 1 cup yogurt
  • 1 tsp mustard seeds.
  • 1 tsp roasted cumin seeds and red chilli powder.
  • 1/2 inch ginger (grated).
  • 2 green chillies.
  • 7-8 curry leaves.
  • 2 tsp sugar.
  • Oil for frying.
  • Water as required.
  • Salt to taste.

How to make Dahi Baigana (Brinjals in a yogurt gravy)

  1. First wash the brinjals, slit them into 4.
  2. Marinate the brinjals with salt and keep aside for 10 min.
  3. Pour the yogurt into a serving dish add some water and blend properly.
  4. Add salt, sugar, roasted cumin seeds and red chilli powder to the yogurt and mix well.
  5. Heat oil in a frying pan, deep fry the brinjals and keep aside.
  6. Add the brinjals to the yogurt mixture.
  7. Heat 1 tsp oil in a pan,splutter mustard seeds. Add green chillies, grated ginger, curry leaves.
  8. Pour the above contents into the brinjal and yogurt mixture.
  9. Dahi baigana is ready.

My Tip:

Add everything to the yogurt mixture in room temperature.
