ABOUT Chilled Yoghurt- cucumber soup with mint RECIPE

This is a cold soup, served chilled to quench the thirst in this scorching summer heat & is rejuvenating too!!

Ingredients Serving: 4

  1. 1 medium, firm, cucumber
  2. 150 gms natural yogurt
  3. 60 ml sour cream
  4. 1 small clove garlic, crushed
  5. 1 tsp lemon juice
  6. 1 tsp chopped fresh mint leaves
  7. Salt and pepper to taste
  8. Thin slices of lemon and cucumber, mint sprigs to garnish

Instructions

  1. First, peel the cucumber thinly with peeler so as to leave some of the green, then slice it.
  2. Reserve a few slices to garnish the soup, then place the rest in a blender along with the yogurt, sour cream and crushed garlic. Blend until smooth.
  3. Add a seasoning of salt and pepper and lemon juice, then pour the soup into a container and if it seems to be a little too thick, thin it with some cold milk.
  4. Now stir in the chopped fresh mint, cover with foil or with a lid and chill very thoroughly for several hours before serving.
  5. To serve, ladle the soup into individual soup bowls/ glasses of your choice and float a few thin slices of cucumber and a thin slice of lemon on each one.
  6. You may wish to garnish with mint leaves.
