ABOUT Khatti meethi stuffed lauki kofta curry/bottle gourd dumplings curry RECIPE

Bottle gourd dumpling can be prepared one day before and it can be refrigerated. Whenever we want we can prepare a gravy and dip the dumplings before serving. Dumplings don't absorb much water of the curry. They are mostly prepared for special occasions. I have used tamarind paste and sugar for the sweet and sour taste. Poppy seeds, hung curd, fresh cream has been used for its smooth and creamy texture of the curry and also to enhance the taste. Cashew and raisins stuffing gives this recipe a royal taste.

Ingredients Serving: 4

  1. For the koftas
  2. Grated lauki/ bottle gourd 1/2 kg
  3. Gram flour 1 cup
  4. Tamarind paste 1/2 teaspoon
  5. Ginger chilli paste 1 teaspoon
  6. Cumin powder 1/4 teaspoon
  7. Red chilli powder 1/2 teaspoon or as per taste
  8. Turmeric powder 1/4 teaspoon
  9. Salt as per taste
  10. Garam masala powder 1/2 teaspoon
  11. Dry fruits 4 tablespoon chopped (cashew and raisins)
  12. Oil for deep frying or shallow frying
  13. For making the masala paste:
  14. Whole black pepper 6
  15. Cinnamon stick 1/2 inch
  16. Cloves 2
  17. Bay leaves 2
  18. Green cardamom 2-3
  19. Poppy seeds/ khas khas 2 tablespoon
  20. Onion 1 big sliced
  21. Garlic 5-6 cloves chopped
  22. Oil for frying onions 1 tbsp
  23. Rest of the ingredients for the gravy :
  24. Oil 3 tablespoon
  25. Bay leaf 1
  26. Mustard seeds (small) 1 teaspoon
  27. Red chilli powder 1/2 teaspoon
  28. Kashmiri laal mirch powder 1 teaspoon
  29. Ginger green chilli paste 1/2 teaspoon
  30. Cumin powder 1/2 teaspoon
  31. Tamarind paste 1/4 teaspoon
  32. Sugar or honey 1 teaspoon or as per taste
  33. Hung curd 4 tablespoon
  34. Fresh cream 2 tablespoon
  35. Salt as per taste
  36. Water 1 1/2 cup or as required

Instructions

  1. For the dumpling:
  2. Wash and peel the bottle gourd (lauki) and grate it.
  3. Squeeze out the grated bottle gourd and collect the juice in a bowl we need this juice while making the gravy .
  4. Keep the squeezed grated bottle gourd in a plate add in all the ingredients of making the dumplings except oil and dry fruits, and mix with your hand to make a dumpling dough.
  5. Divide this dough in 8 equal parts, Take one part spread it on your palm to stuff the filling of cashew and raisins.
  6. Cover it by lifting all the sides and make small round shape ball.
  7. In a same way make all the stuffed dumpling.
  8. Deep fry all the dumplings (koftas) in oil till golden brown.
  9. For the masala paste:
  10. Heat oil in a pan fry all the whole garam masala now add chopped garlic saute till it the colour changes, add sliced onions and saute till it becomes soft and pinkish in color. Switch of the flame and transfer it in a mixer jar to make a paste .
  11. Blend to make a smooth paste.
  12. Transfer 3 tablespoon of oil from the pan in which koftas were fried in another pan to make a curry.
  13. Heat the oil add in small mustard seeds, bay leaf.
  14. When crackling sound start coming mix all the dry masala powder, tamarind paste and green chilli ginger paste in 2 tablespoon of water add this mixture into the oil.
  15. Fry this masala till oil start showing in the curry.
  16. Add in gravy paste.
  17. Add in whisk hung curd. Cook for 4-5 minutes. Add in salt to taste, sugar or honey as per taste.
  18. Add tomato puree and stir for 2 minutes pour water 1 1/2 cup or as per your requirement to complete the curry. Again cook till it start boiling. Switch of the flame.
  19. Add these ready dumplings in hot curry.
  20. Drizzle some fresh cream on top of these dumpling before serving and enjoy this khatti meethi/ sweet and sour stuffed lauki/ bottle gourd dumpling/ kofta curry with chapati, naan or ghee rice.
