Ingredients to make Mango and coconut yogurt fool

  • 1 - mango (flesh)
  • 120 ml or 1/2 cup - fresh cream (chilled)
  • 120 ml or 1/2 cup - yogurt
  • 2 tbsp - coconut milk (optional)
  • 2 tbsp - desiccated coconut
  • 3 tbsp - granulated sugar
  • 1 teaspoon - lime juice

How to make Mango and coconut yogurt fool

  1. Chop the mango flesh into small chunks. Heat in a saucepan with the lime juice and 1 tbsp sugar for 5-6 minutes until the mango has broken down or is soft. Let it come to room temperature.
  2. Whisk the chilled cream with the remaining 2 tbsp of sugar until soft peaks form.
  3. Add the yogurt, coconut milk and desiccated coconut then whisk it for a few seconds until smooth.
  4. Spoon a couple of tablespoons of the mixture into your serving glasses, then add a tablespoon of the stewed mango and add more cream- yogurt mixture. Continue the process till the glasses are full.
  5. Chill in the fridge for 30 minutes. Serve it cold.
  6. To garnish (optional) : top with chopped mango and some toasted coconut.

My Tip:

This dessert can be made upto 2 days ahead. It makes 2 good servings and 3 small ones. You can multiply the recipe as required. To desiccate fresh coconut , dry roast on a pan until light brown or bake in a 180 C preheated oven for 6-8 minutes. The thicker your curd, the better texture of your fool. You can use low fat cream. For easier whipping, chill the bowl with the cream and your whisk/beaters in the freezer for 10 minutes. You can skip the coconut milk if you don't have it.
