- 1 - mango (flesh)
- 120 ml or 1/2 cup - fresh cream (chilled)
- 120 ml or 1/2 cup - yogurt
- 2 tbsp - coconut milk (optional)
- 2 tbsp - desiccated coconut

My Tip:This dessert can be made upto 2 days ahead. It makes 2 good servings and 3 small ones. You can multiply the recipe as required. To desiccate fresh coconut , dry roast on a pan until light brown or bake in a 180 C preheated oven for 6-8 minutes. The thicker your curd, the better texture of your fool. You can use low fat cream. For easier whipping, chill the bowl with the cream and your whisk/beaters in the freezer for 10 minutes. You can skip the coconut milk if you don't have it.
