Beetroot yogurt dip or beetroot tzatziki

Ingredients to make Beetroot yogurt dip or beetroot tzatziki

  • 1 - medium beetroot
  • 120 ml or 1/2 cup - yogurt
  • 3 - cloves garlic (finely chopped or crushed)
  • 2 - teaspoons lime juice
  • 1/2 teaspoon - cumin powder
  • 1/2 teaspoon - pepper powder
  • salt to taste

How to make Beetroot yogurt dip or beetroot tzatziki

  1. Immerse the beetroots in a saucepan of water, bring to a boil and then simmer for 20 minutes. Cool, peel and grate the beetroot.
  2. Mix the grated beetroot with the yogurt. Add the garlic, lime juice, cumin powder, pepper powder along with the lime juice and salt. Then mix all the ingredients well.
  3. Serve cold or at room temperature.

My Tip:

This lasts for 2-3 days in the refrigerator. Stir well before serving. You can cook the beetroot in any manner. You can even use raw grated beetroot or pureed beetroot which means the dip will be ready in less than 5 minutes!
