It's a famous Punjabi street food. Tikki chole, samose chole, bhature chole are the main combination which is loved by everyone.

Ingredients Serving: 4

  1. For chole: Chickpeas 1 cup ( soaked overnight)
  2. Onion 2 large chopped finely
  3. Ginger, garlic paste 2 tablespoons
  4. Tomato puree 1 cup fresh
  5. Green chilli 2 slitted
  6. Ginger Juliennes 1 tablespoon
  7. Jeera 1 tablespoon
  8. Asfetoida a pinch
  9. Bay leaves 2
  10. Cinnamon 1 stick
  11. Cloves 5
  12. Green cardamom 4
  13. Black Cardamoms 2
  14. Tea bag 1
  15. Salt to taste
  16. Red chilli powder 1 tablespoon
  17. Turmeric 1/2 teaspoon
  18. Garam masala 1/2 teaspoon
  19. Chana masala 1 tablespoon
  20. Mustard oil 2 tablespoon
  21. Ghee 1 tablespoon for second tempering
  22. For tikki's:
  23. Boiled potatoes 5 large
  24. Boiled green peas 1/2 cup
  25. Ginger chopped 1/2 tablespoons
  26. Salt to taste
  27. GREEN CHILLI 1 CHOPPED
  28. Red Chilli Powder 1/2 teaspoon
  29. Garam masala 1/2 tablespoons
  30. Bhuna jeera powder 1 tablespoon
  31. Bread crumbs 1/2 cup
  32. Oil for shallow frying
  33. For Garnishing:
  34. Green chutney 1/2 cup
  35. Date tamarind chutney 1/2 cup
  36. Chopped Onion 1/2 cup
  37. Shredded carrots and radish 1/4 cup

Instructions

  1. Put chickpeas into a pressure cooker add tea bag, salt, turmeric powder, green and black caradamom, cloves, Cinnamon stick, and few drops of oil. Pressure cook for 5 whistles with 3 cups of water.
  2. When it's done add oil in another pan heat it upto smoking point and add jeera and bay leaves. After 1 minute add chopped onion. When it's translucent add ginger garlic paste. When it is done add tomato puree. Cook till the masala leaves the oil.
  3. Now add red chilli powder and chole masala. Cook for few seconds and add boiled chickpeas after removing khada masalas and teabag.
  4. Gravy consistency depends on your choice. cook with covered lid on slow fire for 20 mintues add slitted green chilli and stir occasionally.
  5. After this remove it from fire. And garnish with chopped coriander. And heat some ghee add asfetoida, ginger Juliennes and garam masala. Mix this second tempering to cooked chole and cover lid immediately for few minutes.
  6. Your chole is ready​ to serve.
  7. Now we start making tikki's. Mash potatoes and add chopped ginger, bhuna jeera powder, salt, green chilli, garam masala. Mix properly add bread crumbs and boiled peas. Make a fine dough.
  8. Heat a pan and add oil for shallow frying. Take enough dough and make a ball and press firmly to give the shape of tikki.
  9. Put it in pan add cook golden brown from both sides. Your tikki is ready.
  10. Make in this way another tikki's . Take a serving dish and place tikki's over it and pour chole over it and some green and date tamarind chutney . Garnish with onions and carrot radish.
  11. Your Punjabi masala chole tikki chat is ready to be served.
