ABOUT Soya Beans Curry RECIPE

Soya Beans are high in protein and it is of high nutritional value. It contains vitamin K, riboflavin, folate, vitamin B6, thiamine and vitamin C. Also it contains significant amounts of iron, manganese, phosphorous, copper, potassium, magnesium, zinc, selenium, and calcium. This is a vegan recipe and hence it can be consumed by all. Although, it has been mildly spiced to taste the Indian taste buds. Spices can be reduced or increased as per taste.

Ingredients Serving: 4

  1. Soya bean 200 Gms (346 Calorie)
  2. Soya bean oil 4 tbs
  3. Potato 2 pc
  4. Tomato 2 pc
  5. Onion 2 pc (medium)
  6. Garlic 18 pods
  7. Ginger 1 inch
  8. Green chilli 3 pc
  9. Red dry chilli 5 pcs
  10. Cumin seeds 3 tbs
  11. Salt as per taste
  12. Turmeric (home made) 1 tsp

Instructions

  1. Soak the soya beans overnight or for at least 6-7 hours. Peel the potatoes and cut them in halves.
  2. Now in a pressure cooker, take soya beans and potatoes pour water, a little more then the level of the contents, add salt and pressure boil it in low flame for 5-6 whistles. It takes time for the soya beans to turn soft.
  3. Boil tomatoes and puree it in a mixer grinder. Make a fine paste of ginger, garlic, onion, cumin seeds, green chillies and dry red chillies.
  4. For tempering, take a wok and heat oil. Add the paste of mixed spices, fry until they turn golden brown. Add tomato puree, little salt and turmeric.
  5. Remember you have added salt to the boiled soya beans, so careful! Stir fry until the water content gets evaporated and the spice mix starts releasing oil.
  6. Add the boiled soya beans and mash the potatoes in it to thicken the gravy. Bring to full boil and keep boiling for 15 minutes. Your healthy soya bean curry is ready. You may garnish with fresh coriander leaves. Serve hot with rice or rotis.
